Chocolate



We work with two types of chocolate at Miette.

For our fine chocolate collection and our artisan bars, we use a Venezuelan chocolate as follows:

  • Mijao 61% Carenero bean dark chocolate
  • Caoba 41% Carnero bean milk chocolate
  • Icoa Carenero bean undeoderised white chocolate

We selected this chocolate from dozens due to its spicy, earthy flavour, which is rich, satisfying and complex.

The rare and coveted Carenero bean, grows exclusively in Venezuela. It is a hybrid species, closer to the true chocolate enjoyed by the Incas than the commercial varieties used by the mass confectionery makers.

We encourage all our customers to taste our dark or milk chocolate truffles, or our artisan bars, which allow you to appreciate the woody, spiced tones of this very special chocolate.

For our dipped fruits, children's items and chocolate squares we use a 60% Belgian chocolate. This gives a simpler taste, with rich cocoa flavour, vanilla and (in the milk and white chocolate) cream on the palette.

From time to time we offer specials using Origin chocolates from Sao Tome, Costa Rica or Madagascar. We also use Valrhona blends for specials...if you've got a favourite, ask. We don't generally need much encouragement to start playing around with chocolate.
